Salt & Shore Consulting is led by Gabriel Polansky, a hospitality operator who understands both the details of service and the systems behind sustainable performance.

Gabriel’s career has been shaped by high standards, complex operations, and leadership roles where preparation and follow-through matter. As Executive Sous Chef of Banquets at Bellagio, he worked in a luxury, high-volume environment where large-scale events depend on detailed planning, communication, quality, and consistency.

He also served as Executive Chef at Genoa Lakes Golf Course, leading culinary operations in a setting that brings together daily service, member and guest expectations, events, staffing, purchasing, and financial responsibility.

Additional experience in senior-living dining strengthened his work with production systems, recipe and menu development, costing tools, inventory processes, cleaning standards, and practical operating documentation. Today, he brings those lessons together as Founder and Owner of Salt & Shore Consulting.

Who does Salt & Shore work with?

We primarily support restaurants, hospitality operators, startups, owner-led businesses, and organizations facing growth or operational pressure. Projects can focus on one department or the entire operation.

What happens during the free consultation?

We spend up to one hour discussing your goals, current pressure points, and what has already been tried. You will leave with a clearer view of the priority, and we will recommend a next step only if there is a good fit.

Can you help lower food cost and improve margins?

Yes. The work may include recipe costing, pricing, portion control, product mix, purchasing, inventory, waste, vendor comparisons, scheduling, labor efficiency, or service flow.

Do you provide on-site or virtual consulting?

Both. On-site support is available throughout the Las Vegas Valley. Virtual sessions work well for strategy, document review, planning, and follow-up.

Can you help train managers and staff?

Yes. Support can include role clarity, onboarding, training plans, service and production standards, leadership coaching, communication routines, and accountability systems.

Do you work with new openings and turnarounds?

Yes. New-opening support can cover budgets, menus, systems, staffing, vendors, and launch priorities. Turnaround work starts by stabilizing urgent operating and financial issues, then rebuilding repeatable routines.

How much does consulting cost?

A focused Operational Review starts at $450. Monthly support begins at $750, expanded plans begin at $1,500, and startup support begins at $2,500. Larger or COO-level engagements are scoped after the free consultation.

Will I receive a generic report?

No. Recommendations are built around your numbers, people, workflow, goals, and operating reality. Written tools are designed to be used—not placed on a shelf.

How quickly can we begin?

Timing depends on current availability and project size. Use the Availability page to request a weekday and time, or call or email if the situation is urgent.

Is selecting a time an instant booking?

No. The calendar sends a preferred appointment request. Salt & Shore confirms the final date and time by phone or email.
